Grandma’s Mango Chicken


  • 2 kilos chicken breasts
  • 3 white onions cooked
  • 1 tablespoon of curry powder
  • 1 tablespoon of apricot jam
  • ½ cup of mango chutney
  • ¼ cup of cream
  • ½ cup of mayonnaise
  • 3 fresh mangos, sliced


  1. Pan fry chicken breast with olive oil, leave to rest
  2. Dice the onions and pan fry until translucent, leave to rest.
  3. Once chicken has cooled, slice on the diagonal to get 2cm thick slices.
  4. Place all ingredient in a large serving bowl and mix through. Chill before serving


The longer this dish rests the yummier it is, so perfect to prepare the day before.
