Grandma’s Mango Chicken
Ingredients
- 2 kilos chicken breasts
- 3 white onions cooked
- 1 tablespoon of curry powder
- 1 tablespoon of apricot jam
- ½ cup of mango chutney
- ¼ cup of cream
- ½ cup of mayonnaise
- 3 fresh mangos, sliced
Method
- Pan fry chicken breast with olive oil, leave to rest
- Dice the onions and pan fry until translucent, leave to rest.
- Once chicken has cooled, slice on the diagonal to get 2cm thick slices.
- Place all ingredient in a large serving bowl and mix through. Chill before serving
Tip:
The longer this dish rests the yummier it is, so perfect to prepare the day before.
